Advice for selecting a Specialized hybrid bike

Hi!

I'm looking to purchase a hybrid and would appreciate any thoughts between the following 3: (1) Specialized Ariel Sport 2019, (2) Specialized Sirrus X 2.0, (3) Specialized Sirrus 2.0 ST. These are currently in stock and available at my local bike shops based upon the XS size. The Specialized Sirrus 2.0 is also available but I'm intrigued by the step-through because I'm just under 5ft in height.

I would use the bike to ride around paths along the local river, so it would be paved roads/sidewalks, dirt paths, gravel paths, designated bike paths. This is where I would spend most of my time on the bike. I would also take it in my car and go to some hiking paths. I don't intend to use this as a commuter bike going right into downtown where there's lots of traffic and congestion with motor vehicles. But I would be comfortable riding around the cities/towns nearby .

I haven't owned a bike in years (usually just rent) so any advice from more knowledgeable folks would be very helpful.
