Rack mount.

I am trying to mount one of those rack on the back side of my bike but I don't know if this bold/screw/whatever it is, it can support the rack.
More to the point I want to mount this:
https://de.ortlieb.com/en/products/quick-rack

I don't want to use something that is designed for something else and brake my bike (its made of carbon).

That rack specifically mounts to the quick release.

Your bike doesn't use QR, so you will not be able to use that rack unless there's an alternative thru-axle which would include quick release end caps.

To understand whether a bolt will hold, you need to consider its material, size, and thread, as well as the expected load. If the bolt is of good quality and correctly selected, it should withstand the normal load from the trunk. It is important that the fastening is secure and does not loosen during use. You can check it by loading the trunk a little before complete installation.
