from 8-speed cassette to 7-speed

My inherited road bike has 2x8 system, but the rear cassette is done and too rusty. Still driveable, but I'd prefer to change it. I have in my garage a nice set of older Mavic wheels what are faaaar better than the current, the only problem is that there is a 7-speed cassete (mint condition). I plan to just swap the whole wheel. My question, would adding a 7-speed cassette to 2x8 system would cause issues with shifting performance? I assume that the chain might jump off once I shift to the low or top gear?

Hej. I had almost the same experience when my Centurion's rear wheel got was stolen; found nice replacement with 6 instead of 7 gears. Didnt feel issues with shifting but like you assumed, chain fell from the small ring when I shifted to the lowest possible gear (7th). What did I do? Just learnt to not shift on the 7th and that's it Smile but that was my daily commuting bike and a student's solution. Some rear derailleru adjustment migth do the work?
