Changing handlebars on 2020 FX4

Hi all! I want to replace the stock handlebars on my 2020 Trek fx4 with the Surly Moloko bars for more comfort/ hand positions. This is my first bike with shifters and hydraulic brakes on the handlebars so I was wondering how easy it is to replace the bars? Is it as simple as loosening shifters and brakes and sliding off then back on? A guy at the LBS mentioned I'd need a torque wrench in order to put the hydraulic brakes back on but I haven't seen any more information about this (don't have a torque wrench). I'm also possibly planning to switch out the stem with a 60mm length because I've read it's nicer with the Moloko bars. Thanks for any insight!
