Hi Joe,
There are a couple options, and a big price range. For quick release I recommend the MKS "EZY" range of models; all styles from clipless to block and cage available. They are not cheap: $50-$100 plus depending on model and brand; but they are quality made. I have used standard MKS racing pedals without issue and they are serviceable.
There pedals that fold-up so that they do not provide as much as when in a normal use position. That saves about 6" of space, but you will still have about 1"-1.5" or more of pedal exposed on each side depending on a specific design. Cheap ones run from under $10 to about $15; avoid them!! Better models will run about $20 to $50; shop and compare. I use Wellgo (non-folding; clipless, and "rat trap") pedals on multiple bikes and they have held up quite well and are not very expensive.
I am not sure how much the MKS or other QR pedals leave protruding from the crank arm compared to fold-ups but I believe it is less than the fold-up styles. I am sure that both styles have their pros
and cons so research and test. I have never seen them at bikes shops, but call around and see if someone has some in stock to test before buying online.
I am getting ready to find some myself (clipless QR type) because I travel with 2 to 3 bikes in a medium sized car, and they keep the bikes from beating up another bike and make taking bikes in and out of the car easier; but space is not a concern for me.
One big pro with QR pedals is that if using 2 or more different pedal types (clipless-road or MTB, block, cage, etc.) they allow you to change to the exact pedal you want for certain conditions if using on particular brand. I think most MKS "EZY" are interchangeable without needed to unbolt the adaptor stud.
