I have a similar desire - some of the grand climbs (eg. Mount Ventoux) and the cobbles of Paris-Roubaix, the Arenberg Forest. Also, would love having a multiple-day tour in Norway.

I know a friend that recommends a loop around the island of Taiwan. Lots of nice scenery, friendly people, and great Chinese Food everywhere.

For fun I'll ride my horses, but an ebike would be good for errands around town.
Our city is supposed to be building a bike loop all the way around the city but much of it isn't really fit to call usable.
I've always wanted to do the ride up from Estes Park, CO to the continental divide and then down the other side.
I would love to do the full RAGBRAI! I did the first half of the ride in 2017 but couldn't do the whole week due to schedule. I have tons of family in Iowa, and the whole attitude of "ride for an hour, have a snack, ride another hour, have a beer..." is the best way to do a bike ride!

I would like to try a beach ride - maybe Oregon coast or somewhere in the south like Texas or Florida (if I ever get over that way)
VA Beach and Switzerland is on my Bucket list!
