Looking for any information related to fixed gear records. 24 hour distance - either indoor track or road, any organized ultra-distance events preferably 200+ miles.

I hope you find the information you're looking for.

It's going to be comparable to most road events though, or at least Time Trials, because singular gears/gear ratios are used for the majority of the run. When I do my runs uptown, I tend to get into high gear and stay there as long as possible. I only switch gear on a run like that because it's stop and go.

I was just reading one of the largest chainrings being used these days on pro is a 58T in time trials. I would be tempted to run one of those myself. Another very famous CX star is renowned for running a 50T with Sram 10T to increase grinding on downhills and prevent spinning out. Not single speed data entirely, but you can get useful information by studying these types of cases and where certain gear ratios are preferred for their purpose.
