Brake / Gearing Cable Replacement Options?

Hi,

I've just started to completely strip, clean and re-assemble my old road bike (Eddy Merckx circa 2003, full Ultegra)
I need to replace the Brake / Gearing cables and will be buying online. I notice that all of the suppliers (PBK, ChainRecation, Wiggle) offer Dura Ace and 105 selections, but nothing for Ultegra.
My question is: will either the 105 or DA work OK with Ultegra. Also, I notice other brands out there offering brake / gear cable - are these OK to use with Shimano, or do I need to stay alined with the Brand?
I need to replace the chain also - 9 speed Utegra, there seem to be a couple of options (HG93 & HG73) difference in price also. Are you paying more for one because of the quality? Will both of these fit a 9 speed Ultegra set up?

Great site by the way, am using it almost daily.

Hi JackRabbit U b fine whit Dura Ace Cables O 105 im running on my bike ultegra shifters whit Dura Ace Cables and work fine and the chain. u can used both chain they are 9 speed but u need to check how many links are and the old one because the chains they have different 116 links 114 links so make sure how many are on the old chain i hope this help good luck.
also u can check Jagwire cables

Can I assume that the gearing cable is the same ie - shimano brand etc.
What is the main difference between brake and gearing cable?
