Never rode at night, but some early mornings, before sunrise, was beutiful. Seeing the sun come through the trees, quiet, serene, deer running through the woods, crunch of snow beneath you. I liked the darkness, but I understand the emptiness.

Being chased by a werewolf under a full moon will liven things up... you won't be dwelling on shadowy details as you pedal for your life, lol.
I'm actually looking forward to camping at nearby 'City of Rocks' State Park under a full moon... might have to bring my pedal bike for the dirt loop road in the campground. The boulders---some over 30' high---will look awesome in the moonlight, but the pesky werewolf must be taken into consideration! Somehow, this scenario reminds me of the Dead Kennedys tune, "Dog Bite!"

I've done some night riding, mainly full-moon rides. As an occasional ride, it's okay, and I did enjoy it, but it's a totally different experience to my daytime adventures.
I guess at the end of the day, it's why we ride, and for me, it's seeing the beauty of nature around me, the birds, and the views where I ride
I absolutely love riding at night. It is magical.
My second love is riding in the warm, humid atmosphere, especially after the rain when the petrichor is amped up.
Simple answer is that when using lighting you only have tunnel vision. Your peripheral vision is essentially blinded, and thus you are starving your brain of the range of visual information is used to when you normally have sunlight or bright lighting. Scary!! Remember, the brain is what gives you vimagery, the eyes are just a tool to channel the uninterpretted data to the brain for processing. Your nrain is continually trying to make sense of its environment and limiting data input is abnormal to us. Have you ever completely lost your sense of taste? Even though your brain knows what something tastes like it cannot understand why food is now experienced only by its texture and it seems odd to you because it is.
I do not use lighting for night riding except in extreme conditions where I use lower intensity lighting; or I dismount as conditions require; thus my night vision is not affected and though riding in very dim conditions (there is still light on a "moonless" night; even away from artificial lighting sources) I still have my peripheral vision.
The easy way to experience this in daylight (though not to the same degree) is to mount a blinder on your helmet/head with a tube that only allows for limited forward viewing (like a bike's headlight). Your brain is trying to perceive more but cannot because the peripheral vision is now inhibited just as it is in darkness when riding with a bright beam in front of you, except at night you also do not have the extended forward range of vision (unless using a super bright beam that illuminates far forward; though you still have a "black hole" somewhere in front of you depending of light used; flood, semi-flood, focused beam, etc.).
With no lighting your brain processes imagery more normally because you have removed the high contrast between lit and unlit areas and your eyes adapt to the ambient light allowing you brain to the same range of vision/peripheral vision as normal, but under ambient light conditions which do not affect the eye except during initial adaptation to the reduced light. I have ridden thousands of miles at night, and except for traffic approaching I keep my front lights off (red lighting in rear does not affect your night vision so keep it on when road cycling. Shield your eyes from any direct lighting (look down and to the side a little) so that your eyes are able to more quickly re-adapt to night vision.
There are additional issues I would address, but that gets a bit more complicated, though anyone with professional photographic experience (especially before digital cameras) would know what I am talking about.
