Sturdy touring bicycle for a LADY

Hello. Young lady lookin for a nice bike for weekend tours and travelling (hopefully, 1-2 week trips). My simple requirements:

- Should have rear rack or at least the possibility of easily installing one.
- Mudguards? Lights not needed, can get separately or use spare ones from garage.
- Comfy low frame, not too high.
- More than a single gear Big Grin

I'm 5'7'' and used to bike much 8-10 years ago, but recently not more than 5 miles when commuting on fixie. For that reason more gears sounds awesome. I'll bike on mixture of tarmac roads and occassional gravel, most likely no forest trails. Money is not a factor, but lets not go all-in Big Grin Any essentials for touring? Any advice or even a specific bike model is appreciated Smile
