Freehub for 7speed Shimano FH-RM40 hub?

Any 7 spd Shimano hub body should work fine. If you're getting it at your LBS and they use QBP, you want part #FW8946. That's a STX-RC.

I thought there might be differences in widths or mating surfaces or something.

That's pretty much it, as 7 spd is almost a dinosaur now and very few new parts being made. The parts still being made are for the last available 7 spd components, of which your RM-40 is one of.
