Do you mean you have gears now, and you want to go to single speed?

If it was me, I would keep the gears.

The best gear depends on the fitness level of the rider, and the places the bike will be ridden. I suggest, choose the gear you think is best, and ride in it. Then decide if you want to go up or down a gear. Ride in that gear, and even change again, until you decide which gear is best.

Larger gears should last longer before they wear out. If it has three chainrings, use the largest one, and see which rear sprocket is best with it.
